Easy Coffee Cake

Cake Ingredients:

  • 1 ½ c flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 egg – beaten
  • ¾ c melted butter (or Crisco)
  • ½ c milk
  • 1/8 c of sugar

Topping Ingredients:

  • ½ c brown sugar
  • ¼ c flour
  • ¼ c butter (softened & room temperature)
  • 1 Tb cinnamon

 

Directions:

Cake batter:

  1. Sift together flour with baking powder and salt.
  2. In another bowl beat together egg, sugar, and melted butter.
  3. Add milk.
  4. Stir in flour mixture, mix well.
  5. Pour batter into a greased and floured 8″ or 9 ” round cake pan.
  6. Sprinkle crumb topping evenly over batter.
  7. Bake at 375 degrees for 25 to 30 minutes or until cake is done.

 

Topping:

Combine topping ingredients, blend with fork until crumbly.
